A 55-year-old Canadian fried-chicken brand (Mary Brown's) needed to land in India fresh, fast, and operationally sound. SG was engaged to make the kitchens run, the supply chain hold, the teams ready — and the doors open.

The Brief

A global QSR with one rule: nothing frozen.

MB Chicken's entire promise is fresh, never-frozen, hand-breaded chicken cooked in small batches. Honouring that in a new country is an operations problem before it is a marketing one.

MB Chicken — known internationally as Mary Brown's, founded in St. John's, Newfoundland in 1969 — runs 300+ restaurants worldwide on a "made fresh from scratch" model and proprietary cookers. Entering India meant rebuilding that model locally: Grade-A fresh chicken, India-grown potatoes for the signature Taters, and a from-scratch vegetarian menu created for the market.

SG’s mandate was to turn that brand standard into a working day-to-day operation on Indian soil — repeatable across every new site, from the flagship dine-in to the country's first MB drive-thru.

Stood up the day-to-day operating model — kitchen flow, prep schedules, batch-cooking discipline, hygiene and food-safety protocols, and store-level SOPs that protect the "fresh, never frozen" standard at speed.
